Poplar Farm Following the Seasons

At Poplar Farm we strive to use locally sourced, homegrown, free range or organic ingredients where possible.   We do not use hydrogenated fats or additives in our home baked Products.

Poplar Farm Recipes

Pumkin and Coriander Soup

Ingredients

I medium sized pumpkin

1 large onion

1 large potato

1 tablespoons olive oil        

1  full tablespoon coriander

1 teaspoon cumin

1/2 teaspoon turmeric

Salt & pepper to season

500ml milk

1lt vegetable or chicken stock

1 teaspoon of honey

Peel and dice pumpkin and chop into small chunks

peel and slice onion

peel and dice potato into small chunks

Add olive oil to a large based pan, warm through then add the onions, saute until tender then add the diced pumpkin coat well in the oil and warm through add the coriander, cumin and turmeric let the spices infuse and keep stirring.  Add the potatoes stir well, saute for about five minutes, mix in the honey.  Add the stock and milk & bring to the boil and then simmer for twenty minutes or until the pumpkin and potato has softened.  Take of heat allow to cool slightly then blend with a blender .  Season to taste with salt and pepper.
